Piece-Of-Cake Apple Pie

Apple pie and the 4th of July go together like cookies and milk. Try this easy twist on an apple pie that will impress and that your family will talk about for years to come.

Serves: Eight
Prep time: 15 minutes
Skill Level: Medium
Oven: Preheat to 425 degrees



For Crust:
1-1/4 cups all-purpose flour plus more for dusting
1 teaspoon sugar
Pinch of salt
4 ounces (1 stick) unsalted butter, cut into small cubes, chilled firm
2-4 oz ice, cold water


For apple filling:
1 can apple pie filling
1/4 cup chopped pecans (or any other nut you like)
1/4 cup dried cranberries
1/8 teaspoon cinnamon



1. Place the flour, sugar and salt in a food processor; pulse a few times to blend
2. Add the cubes of butter and pulse until the mixture is loose and in large pieces
3. While pulsing, add 2 ounces of the ice cold water; add more water a teaspoon at a time until the mix just comes
4. On a floured surface, roll out the dough into a 14 inch round; it doesn’t have to be pretty
5. Roll the dough onto the rolling pin, transfer to a parchment lined baking sheet
6. Empty the can of pie filling into the center of the dough; spread it out leaving a 3-4 inch edge of dough all around
7. Sprinkle the cinnamon on the pie filling, then the cranberries and the nuts
8. Carefully fold the crust over the filling, working your way around the filling
9. If desired, brush milk on the top of the crust and sprinkle with sugar
10. Bake for 30 minutes
11. Let cool for 10-15 minutes before serving


Note: any other flavor fruit pie filling can be substituted.
