Quinoa Salad

This healthy Quinoa salad is the perfect accompaniment to any 4th of July BBQ, and is perfect for guest that might be a little more health conscious.

Serves: 4 side dish servings or 2 main dish servings
Prep time: 30 minutes
Skill Level: Easy



1 cup uncooked quinoa (rinsed well)
1/4 cup diced onion
1/4 cup diced carrot
1/4 cup diced red or green bell pepper
3 Tablespoons dried cranberries, diced
2 Tablespoons dried blueberries
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup extra virgin olive oil
1/2 cup sliced or slivered almonds for garnish



1. Bring two cups of water to a boil; add the rinsed quinoa and reduce heat to medium; cover and cook quinoa for 15 minutes
2. Add the diced onion, carrot, bell pepper, cranberries, blueberries, the salt and pepper; cook covered for an additional 5 minutes
3. Removed from heat and leave covered for an additional 10 minutes
4. Add the extra virgin olive oil and stir quinoa mixture well
5. Garnish with almonds

Note: Quinoa is a superior source of protein and other nutrients and is would be suitable for a Vegetarian entree. This salad may be served as a main entree or a side dish. It may be served hot and is equally good cold.
